  • Bake for 25-30 minutes or until a toothpick inserted into the centre of the cake comes out clean.
  • Remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
  • Once the cake is cooled, you can top it with sliced strawberries, raspberries, whipped cream, powdered sugar, or any other toppings of your choice.

  • In a large mixing bowl, combine the Greek yoghurt, granulated sugar, eggs, vegetable oil or melted coconut oil, lemon zest, lemon juice, and vanilla extract. Mix until smooth and well combined.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
